The recipes in this book are our way of sharing with you the great things going on with environmental education, nutrition, and culinary training in the Blooming Chefs program. In our after school cooking classes, students receive a culinary school level education. You will see a sampling of the rich array of recipes we work on. In the course of a semester, students prepare breakfast, lunch and dinner entrees, as well as healthy snacks and desserts. We focus on whole foods, meaning unprocessed and unrefined. For example, you will see that our pancake & waffle recipes feature whole wheat flour, buckwheat, flour and cornmeal. Through our summer organic gardening program and our 07-08 program, The Bennington Elementary Fresh Fruit and Vegetable Cart, (a Vermont Department of Education Funded Farm-to-School Program) we have continued to turn kids on to a variety of healthy fruit and vegetable based treats.
We hope you enjoy these sumptuous recipes. They are tried and true, and most of them feature a special format we've developed to make them super kid-friendly!
